A Hearty Beef Stew for Chilly Days

Beef stew is a classic comfort food, perfect for warming you up on a cold day. It’s also a versatile dish that can be adapted to your liking with different vegetables, herbs, and spices.

Here’s a basic beef stew recipe to get you started:

  1. Heat olive oil in a large Dutch oven or pot over medium heat.  Season beef with salt and pepper. Add beef to the pot and cook until browned on all sides, about 5 minutes per side.

  2. Remove beef from the pot and set aside. Add onion, carrots, and celery to the pot and cook until softened, about 5 minutes. Add garlic and cook for an additional minute, until fragrant.

  3. Stir in beef broth, tomatoes, tomato paste, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 1 hour.

  4. Add potatoes to the pot and cook for 15 minutes, or until tender.

  5. Stir in frozen peas and cook for an additional 5 minutes, or until heated through.

  6. Remove bay leaf before serving.
